Gnocchi Board ~ Vastly improved gnocchi ridges with this fun little paddle from Williams-Sonoma!
I went into Williams-Sonoma today and the front display was all about pasta. This gnocchi board stood out and seemed as good a reason as any to take a carb counting vacation. One reasonably sized portion of gnocchi later, I stand by that decision. It was so simple and effective that I wonder what I was doing trying to make gnocchi without one. It's not limited to just gnocchi either, the ridges and roller can produce a number of classic Italian pastas.
I had a stash of purple potatoes that were perfect for this gadget's audition.
Purple potatoes or Vitelotte have a beautiful color all the way through that remains even after it's cooked.
This was also an excuse to bring out my ricer... my favorite kitchen tool / play-doh memory.

The Gnocchi Ridger and Roller was a great pick up. Forming the little potato pasta had always seemed like too much of a hassle. This little device not only speeds up production, but makes deep ridges which helps the gnocchi hold on to their sauce. For this inaugural effort I kept things simple, tossing them with a little butter and sage. I finished the dish off with a little bit of an aged Manchego and a drizzle of Mike's Hot Honey, which has become somewhat of a favorite.
